This super simple salad is perfect for when it’s hot outside and you just want something easy, quick and refreshing. Ayurveda typically prefers cooked foods, however the combination of olive oil and lemon is a wonderful aid for digestion and if you’re going to eat raw foods - the summer months are the time to do so! We love how versatile it is: it’s delicious on it’s own, as a side, and as a foundation to add any fresh seasonal veggies or leftovers to jazz it up. This refreshing salad is the perfect addition to any summer barbeque or outdoors dinner party.


 

INGREDIENTS

1 butter lettuce or romaine
1 large handful of mint, picked leaves
3-4 tbsp olive oil
2 tbsp lemon/lime* juice
Pinch of salt
Black pepper to taste

METHOD

  1. Wash and slice the lettuce, combine with picked mint leaves (you can leave them whole or chop/tear them into smaller pieces).

  2. In a little bowl mix the olive oil, lemon juice with a pinch of salt and pepper.

  3. Mix the leaves with the dressing, and serve.

 

East by West tip: If you’re mind-body type is predominantly Pitta or you have a Pitta aggravation choose lime juice which is less heating.
